COFFEE AND TRADITIONAL TORTILLAS
XVIII Century Quito’s Style

This service consists of live practice demonstrations of the processes related to coffee consumption in Old Quito starting with the recognition of the native plants, ancestral cooking utensils, recipe elaboration according to old traditions and tasting of the products elaborated during the activity.

he activities will be performed by the clients under the direct supervision of Galeria Café Restaurant’s Chef.  The tasting takes place after the elaboration of all recipes in the restaurant salon, the plates to be tasted are:

  • Organic Coffee from Zaruma (filter using chuspa a traditional method), verbena tea and guayusa tea.
  • Sauces of ají grinded in volcanic rock.
  • Filled Corn Tortillas, golden in a pot
  • Different tortilla fill flavors are available

Price per person: $18.80

Portion per person: 4 tortillas and 1 coffee.

LOCROS Y PAPAS
varieties based on locro Quiteño

Application of the best techniques of the Andes ancestral cooking for the preparation of one of the most emblematic soups of Quito’s city, the classic Locro de Papa.

The participant will be able to know and elaborate this traditional soup with ancestral utensils and will have at his disposal several classic additional ingredients of Quito´s cuisine to create an interesting variety of signature Locros to his liking.

The plates to be tasted are:

  • Classic cheese Locro with avocado
  • Native ingredients: quinoa, corn, tostado, yuyos (Andean aromatic herbs), seeds, among others.
  • Ají grinded in natural volcanic stone.

MAKE YOUR OUWN VEGAN TRUFFLES

In this experience you will learn about the history of ecuadorian cocoa fino de aroma and how Pacari Premium Chocolate has developed a brand that has won 3 consecutive years to the best black chocolate bar in the world at the event CHOCOLATE AWARDS in London.

The participants prepare their own vegan truffles with organic ingredients, without sugar and without milk.

CHAPOLATE
Chocolate & máchica XVIII Century Style

Chapolate is a mixture of hot chocolate with máchica, it is the result of all the ancestral processes that are applied in this experience to enrich gastronomic knowledge.

  • Elaboration of máchica; roasting of barley in pot and grinding in stone.
  • Elaboration of hot chocolate in clay colony style.
  • Elaboration of “chapo” and “máchica traposa” with their own hands.
  • Tasting.
